Day 4- Violet’s Epic Cake Recipe

This is my guide to baking an epic cake. Yes it’s seriously epic! Those of you with dial up might want to not continue because there are around 50 photos! Trust me though, it’s totally worth it because the end result is both pretty and delicious!

So here’s roughly what you need:

-3 standard cake mix bags (I know cheating :P) If you are in Australia get the Home Brand butter cake because it is AWESOME and it’s only 60c per bag.
-Eggs
-Milk
-Butter Milk
-Fondant icing
-Ingredients for royal icing (check this recipe it’s great)
-Milo (or just plain old chocolate powder if you’re not in Aus)
-Red and green food dye

Gather your ingredients.

Preheat your oven following the instructions on your packet mix.

Now it’s time to make the cake mix :D Depending on your cake mix the ingredients might be different but this is how I do it… Packet mix in the bowl!

This cake requires 3 different layers, 2 of plain butter cake and 1 of my version of red velvet cake. We’ll make the red velvet version first.

Add an egg! Eggs look so gross XD

Add in the butter milk, you should use however much milk the packet mix says to, mine said 3/4 of a cup. For the other layers you should use plain milk.

Mix it all together

And then beat it to death! It should be nice and fluffy ^_^

Once it’s fluffy add 3 table spoons of Milo and beat it in.

Now add some red food colouring, this is why it’s called red velvet cake and it makes for a really pretty effect when it’s finished.

Pour it out into your cake tin, I use a silicone one because it’s easy to get the cake out of.

Put it in the oven until it’s cooked all through :D

Turn it out onto a rack to cool and make the other 2 layers.

The other two layers should not have milo, food colouring or butter milk in them. They should just be plain old butter cake following the directions.

If your cake breaks when you turn it out, just use some icing and glue it back together :)

Once your 3 layers have all cooled down it’s time to cut the tops off them. The reason you cut the top off is so you can get a nice flat cake and it doesn’t look like a gigantic lump on top ^_^ It’s much easier to ice a flat cake! So get a knife and poke it in the side towards the middle and start working your way around. Keep going until you’ve done the full circle. Use the knife to lift the top off (and eat it because by now you’ve spent forever staring at cakes bloody baking and you’re probably hungry).

Once you have 3 flat layers get some icing (I’m using Betty Crocker) and cover the top of the red layer/

Once it’s covered use the plate you had it on to flip it onto one of the plain layers.

Cover the top of the red one again and flip the last layer on to it. This is what you should end up with!

Cover the entire thing with icing ^_^

One for the cake, one for the cook!

Now get your fondant icing and roll it on the bench top. If it’s too hard pop it in the microwave for 10 seconds, if it’s too sticky dust it with icing sugar. Once you’ve rolled it out, drape it over the whole cake. It should end up something like this… You can see that I’ve repaired a crack by putting water on my finger and rubbing it. It’s going to be covered in icing so no one will ever notice!

Now it’s time to decorate! Make some royal icing in the colour of your choice, mine is pink! Put it into a piping bag and start decorating! Ok mine isn’t very even but this was my first time using a piping bag so it’s ok!

I tried to make it very decorative, there is a big heart on top, scalloping on the outside and lots of little bumpy bits. Whatever you do as long as you put effort in everyone will enjoy it!

Now put it in the fridge to cool and it’s time to learn how to make icing roses :D Grab some fondant icing and colour it pink with food dye. You do this by putting a tiny amount on and kneading it until it’s pink. Make sure to do this on a surface that you can clean easily, food dye will stick to EVERYTHING. Maybe wear gloves, look at my hands, they’re all red XD

So let’s start making a rose! Pinch off a little bit of icing and roll it in a ball.

With your finger squish one side of the ball…

Pick it up and roll the squished end in on itself like the photo below. You should make a bunch more squished balls, these are the petals.

Roll the second petal onto the first but on the opposite side like below:

Keep making petals and placing them around the part you’ve already made. You should over lap the next petal slightly with the one you’ve just done.

As you go you should use your finger to push the petals out a bit.

Once you think you have enough petals roll the bottom of the rose together with your fingers so it’s a bit rounded.

Make a bunch of them :D This is what you should end up with!

Now bring out your cake from the fridge. Mix up a bit of royal icing and colour it green.

I put a bunch of green icing in the middle of the heart and placed the flowers on top.

  • Dear god but you are patient woman! I love those roses. I rember making them from bread dough and baking them. We used to make brooches with that in the 80′s. :P
    It looks fantastic and I have never tried to make red velevet so, with any luck I may just make some cake this Christmas!

      LOL patience is not my thing, I actually got frustrated half way through and did the decorating a day later XD Hence the outfit change half way! Oh bread dough flowers are a great idea, I might have to give it a try, OH you have to try red velvet, it’s just ultimately delicious. I can’t wait to see what you come up with! Btw, you remember the photos you used in your cake book post? I found out that James’ Mum actually owns the book! Her mother gave it to her for her 16th birthday but she never used it XD

      Thank you! Ready made cake batter is the best! If I’m going to so much effort decorating I can’t be bothered making the cake from scratch! Omg what are you doing awake at 5:50am? Go back to sleep for a few hour then bake! Heehee I love my cake stand, it’s from Myer but I bought it with a gift voucher! Bring on photos of your epic cake!!

    Lol if you want me to be honest this was like the epic blog of HORROR for me because I actually hate cakes! There’s something about foods with crumbly, spongy textures that scare me (bread is an exception except for like… french bread). God i’m a freak.

    Thanks so much for inviting me to the nuffnang party but that’s actually the night of a science graduation party that i’m going to (funny how i’m going to a science grad party even though I graduated from psych this year and i’m ignoring the psych one haha – I hate psych so much!).       XD thank you! I have quite a quick metabolism but I didn’t eat very much of it! Cakes like this are the reason I’ve gained weight over the last few years!

    i'm not quite a fan of pre-mix cake batter though. much prefer to measure everything from scratch! at least then i can always reduce the amount of sugar etc :)

    ps. i'm so going to try making mangomisu for xmas! bought a recipe magazine just for tht.. haha XD

      Aw thanks! You should try out the flowers, they are surprisingly easy! I can’t be bothered with making cakes from scratch, mine always turn out flat when I do them from scratch XD Mangomisu? That sounds yummy! I can’t wait to see the results :D

      Heehee it’s the biggest cake I’ve ever made too! It wasn’t a special occasion, I was just very bored so I made it as a snack >_< I had one piece and James’ family finished off the rest over 3 days ^o^ It’s the first cake I’ve made that everyone actually ate! Hugs and kisses Princess <3

    But I must say I would probably make it ‘fuller’, it lacks off something for my tastes.. xDD
    For example, instead of icing between layers I would use whipped cream (but not the tasteless from the cans), plus if you whip it you can add food dye (pink would look great with this cake!) And not just paint the layers.., put GENEROUS amounts of cream! xDD

    Another tip (and note that I don’t drink.., ever!) is to spray the layers with cognac or any flavoured liquor that fits the general flavour of the cake, this make the the layers much more spongy and fluffy, and last a few days more without it being too dry.

    My favourite types of cakes are the ones with fruits and whipped cream with vanilla mixture. I also love the dulce de leche ones!!
    I kind of like all ckaes as long as is not made with chocolate mixture or too much chocolate on it..
    I love chocolate, but in form of.. chocolate.. xDDD

      Thanks ^_^ Really you’d make it taller? Oh your cake is very pretty, but I personally hate the taste of whipped cream ^_^ I found that substituting butter milk made the cake deliciously fluffy and it lasted 3 days, I think it would have been fine for few more days but it all got eaten XD Oh you don’t like chocolate cake? I only like chocolate cake when I’m in the right mood, sometimes it’s just too rich XD Thank you for such a big comment!

    Your piping is actually really good for a first time! I pretty much suck at piping :P But yeah, the cake looks super pretty and totally fits you! :D Most of the time when I make cakes ..I don’t bother with icing/decoration because my dads diabetic ..and well it just takes too much time! But after seeing something pretty like this ..I really want to go make a cake right now!!! Oh and my favourite type of cake is probably just a sponge cake with cheese cream! :D Yummm !

    Wow Violet. I read this post earlier at work during lunch time. I really love cakes. Ended up going to the bakery to buy some cakes hehe. Your cake decoration is so cute and pretty. I bought a lot of books on cake decoration but am too scared to try them. After Reading your post, I’m inspired to try one too!

      Aww coming from someone who works in a pastry kitchen I really appreciate the compliment! I’m just learning how to ice things but I think I’m improving! Hahaha ok you caught me, mystery solved, I’m chucks_bitch!! I used to come to all the meet ups back in the day there were only like 3 Brissy Lolitas, I was even a Mod on Oz_loli for ages but around 3yrs ago I got very sick so I’ve been kind of reclusive for the last few years.     Oh wow how did you get that layer so gorgeously red looking! I must try Buttercake with milo because everytime I use a standard chocolate cake there isn’t enough red food colouring in the WORLD to pretty up the cake! Plus milo is Boss.

      Well there’s a secret to the red… a ridiculous amount of food dye ;) Milo is freaking awesome for red velvet cakes, makes them much more interesting and delicious! Also then you can eat the left over milo mwahahaha!

        I’m trying it right now with the homebrand cake mixes and milo, the red velvet layer is in the oven now and turning out to be a very lush red :D (it always comes out too maroon for me, probably because I add too much chocolate lol) The milo does work really well because the mixture was still quite pale. I’ve never used Fondant icing before so I’m a little scared! I’m already having a great time making it, I love making sweets! Thank you for the tutorial :3

          I freaking love homebrand cake mix, seriously better than all the expensive ones! Yay for a good red velvet! Fondant takes a bit of practice to drape but the good part is that if you bugger it up… cover it with pink icing roses or something similar :D No worries at all, I want to see how yours turns out!

      I just used 1 packet of it :) It came pre-made in a packet from Woolworths, I can’t remember how many grams though sorry. Hope that helps!
